Nothing like a good pot of chai to warm you and your guests up on a chilly winter evening. This might not be the real way to make authentic chai—I wouldn’t know—but it certainly tastes better than anything you can get at the corner coffee shop. It was my mom’s best friend’s recipe and I am fortunate that she shared it with me.

  • Using your mortar and pestle, crush 12 cardamom pods and 1″ of diced, peeled ginger, place in your teapot’s infuser
  • In a medium saucepan, bring 2 cups of water to a near boil
  • Add 2.5 T of unrefined cane sugar, stir until melted
  • Add two English breakfast tea bags (I snip the string—if you prefer loose-leaf, add it to the infuser with the cardamom and ginger mixture)
  • Add 1 cup of soy milk bring mixture to a scald
  • Pour over the strainer and let steep in your teapot for 5-10 minutes

I am already looking forward to leaving the office and trying this recipe for delicious chai tonight. Winter may be long, dark, and cold, but at least I will have chai in my life!
